Pumpkin Chocolate Chip Muffins

Ingredients
  

  • 4 eggs
  • 2 cups of sugar can be reduced
  • 1 16oz can of pureed pumpkin
  • 1 1/2 cups Olive Oil
  • 3 cups flour I use King Arthur
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon cloves
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1- 2 cups dark chocolate chips
  • Sanding Sugar

Instructions
 

  • In a large mixing bowl, beat eggs, sugar, pumpkin,and oil until smooth.
  • Add in dry ingredients and mix well.
  • Fold in Chocolate Chips.
  • Fill greased or paper muffin cups 3⁄4 full.
  • Sprinkle with sanding sugar on each muffin.
  • Bake 16-20 minutes at 400 degrees
